Before we start this recipe, prepare the artichokes for easy use.
Cut stems off

Slice artichokes in half, top to bottom
Trim tops if preferred. I don't. Too much work for the improvement.
Remove hairy choke with a paring knife or a grapefruit spoon
Lie artichokes exposed side up in ½ cup water and ¼ cup white wine vinegar.
Steam for 15 minutes
They are ready for use in this recipe.
