Braciola, Beef

BEEF BRACIOLA

1 lb piece of skirt steak, butterflied and pounded
Decide to cut the meat in half or fourths to make it easier to cook and serve.

Stuffing:
¼ cup panko
1/8 cup romano cheese
1 x-large egg
4oz ricotta
¼ cup parsley or fresh basil, chopped
½ oz prosciutto butt or pancetta, small diced, fried in ½ t garlic oil
S& generous amounts of freshly-ground black pepper.
Mix the stuffing and stuff the beef
Roll the pieces or sandwich them
With kitchen string, tie them up.

Fry to brown
Simmer in The Gravy
or
Bake w rigatoni and some of The Gravy.
