The 2018-19 Celtics are a team worth watching.
An amazing team, forming.

Based on and around a group of four experienced players who are composed, team players, and talented in every phase of the game: scoring, rebounding and assists.

Kyrie Irving.
Gordon Hayward.
Al Horford.
Marcus Morris.

No other team has a core of players like them.
Not four.

These men make few mistakes.
Have uncommon basketball acumen.
Have egos inextricably interwoven in team play.
And have talent.

Also, the core of four are blessed to have a second terrifically talented core of younger players, Marcus Smart, Jason Tatum, Terry Rozier, and Jaylen Brown, great talents awaiting the seasoning that experience and exposure will bring them.

No backbiting.
No outside agenda.
No factions.

Defining sport.
A team worth watching.
Oh! What lucky fans we are.

Left:
Hard-shell clams are classified by size.
The smallest legally harvestable clams are called countnecks or peanuts, next size up are littlenecks, then topnecks.
Larger still are the cherrystones, and the largest, quahogs or chowder clams.
We use cherrystones in our recipe.

Pancetta is an Italian bacon made of pork belly meat, that is salt cured and spiced with black pepper, and sometimes other spices.
Pancetta in Italy is typically cooked to add depth to soups and pastas.

For culinary purposes, potato varieties are often differentiated by their waxiness: floury or mealy baking potatoes have more starch (20–22%) than waxy boiling potatoes (16–18%).

Onions are cultivated and used around the world.

Answer to Quiz Question:
Who makes the best New England Clam Chowder in Boston?
We do.

The broad strokes:
Render a tasty fat like bacon or pancetta and then fry the potatoes and onions, then the chopped clams, then add the broth and cream.
What could be easier?

CLAM CHOWDER (7-8 cups) 
24 cherrystones
2 cups water
Steam clams open and remove, shells discarded
Clams weigh about 9oz
Save 2 cups of broth
Cut cherrystones into small pieces 

Salt pork/bacon, 2 oz, well-rendered in 12 cup sauce pan w 1 TB butter to lubricate while pancetta starts to liquefy 

12 oz waxed potatoes, scrubbed and small diced
4 oz onions, small diced
Put potatoes and onions into rendered bacon
Add pepper
Add TB butter
Add 1TB clam broth, adding bits more clam broth as needed to prevent sticking and burning of potatoes and onions.
Add ½ cup of freshly-chopped parsley or basil
Add 1/2t fines herbes
Cover and soften the potatoes and onions. 

Pour 1 ½ cups of clam broth into potatoes and onions and cook until potatoes soft
Add chopped clams
Add 4oz of milk and 4oz of heavy cream (Replace milk with light cream if a creamier version is desired)             

Heat fully, garnish with thinly-sliced leeks or scallions and serve with hard crackers.
